Spicy Citrus Beef Tenderloin
Tender tasty stir fry, a good way to use Citrus Cove without burning your face off...
- 1lb pork or beef tenderloin cut into thin strips
- 1/2 cup Citrus Cove
- 1/2 cup beef stock
- 2 tbsp soy sauce
- 2 tbsp fresh ginger
- 2 garlic cloves, finely chopped
- 1 tsp cornstarch
- 1/2 tsp chile flakes
- 3 tbsp peanut oil
- 1 head of broccoli, cut into florets
- 1 yellow bell pepper, sliced
- Cooked wild rice, to serve.
- Chopped fresh cilantro for garnish
Mix the tenderloin strips in a bowl with the Citrus Cove. Leave to marinate for 1 hour. In another bowl, whip together the beef stock, soy sauce, ginger, garlic, cornstarch, and chile flakes.
Heat 1 tbsp of the peanut oil and stir fry the tenderloin strips for 2-3 minutes. Remove and set aside. Discard any oil remaining in the wok. Heat the remaining oil and add the veggies, stir fry for 2-3 minutes. Stir in the beef bouillon mixture, then cover and simmer for 2 minutes.
Return the beef to the wok and simmer until the juices thicken, stirring occasionally. Cook for another 1-2 minutes. Serve over rice, and sprinkle with fresh cilantro.
