Chipotle pulled chicken pizza



We use a pre-made pizza dough for this, but if you have a secret family recipe, use it!

  • 1.5 lbs chicken breast
  • half onion
  • 1 sprig fresh coriander
  • 1 tsp salt


The Sauce

  • 1 tbsp vegetable oil
  • 1/2 cup diced onion
  • 1 clove diced garlic
  • 1  28oz can whole tomatoes
  • 2 tbsp tomato paste
  • 1/2 cup Pirate's Brew
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/4 cup fresh coriander
  • Cheese, Cheese, & more Cheese (grated)
  • Fresh in-store pizza crust


In a sauce pan, drop chicken, garlic, coriander, and salt in boiling water.  Cover and cook until chicken is no longer pink, about 20 minutes.  Drain, discarding everything but chicken.  Let cool, the shred chicken with two forks.

Meanwhile, heat oil and fry onion and garlic until translucent, about 5 minutes.  In blender, puree tomatoes, Pirate's Brew, and tomato paste, add to onion mixture in pan.  Simmer over low heat, stirring occasionally until thickened and reduced, or about 35 minutes.

Add chicken, oregano, and salt, cook for a further 10 minutes.  Remove from heat, stir in coriander.  Spread a generous portion of the Chipotle Chicken on the pizza crust, and grate cheese on it.  Bake in oven at 400 degrees for 10-15 minutes or as per directions on the crust.
